Awesome Gluten Free Sandwich Bread Recipe

When it comes to making a great sandwich you need a great tasting bread. You can’t go wrong with an awesome gluten free sandwich bread recipe to fill that gap.

Total Time: 1 hour, 30 mins

 

INGREDIENTS:

Yeast Mix:
1½ Cup Water or Milk (or Milk Alternative)
3-4 Tablespoons Honey, Sugar or other Natural Sweetener
2½ Teaspoons Bob’s Red Mill Dry Active Yeast

Dry Mix:

3 Cups of Bobs Red Mill Gluten Free All-Purpose Baking Flour
1½ Teaspoons Xanthan Gum
4 Teaspoons Baking Powder
1 Teaspoon Salt

Wet Mix:
2 Teaspoons Apple Cider Vinegar or Lemon Juice
¼ Cup Olive Oil
2 Large Eggs

 

INSTRUCTIONS:

  1. Preheat your oven to 375° Fahrenheit.
  2. In measuring cup, measure & warm milk (it should be warm to the touch, not hot or cold)
  3. Stir in honey. Add in the yeast last. Set-aside for approximately 10 minutes.
  4. Combine the dry mix ingredients in small bowl.
  5. Combine the wet mix ingredients in bowl of stand mixer fitted with the paddle attachment, like the KitchenAid Stand Mixer.
  6. Add in the the yeast mixture that you set aside. Mix again for a few more seconds.
  7. Add the dry mix and beat on medium-high for about 3 minutes. The dough should be wet, thick and sticky.
  8. Oil and flour a 9×5 Loaf Pan or spray with non-stick coating like Pam.
  9. Using a spatula, scrape the bread mixture into your prepared loaf pan. Be sure to smooth out the loaf with spatula or wet fingers before proofing as the loaf will not smooth out itself.
  10. Important: Do NOT over-proof the bread – Let it rise for about 20 to 30 minutes. Don’t let it rise above your loaf pan like regular bread; The remaining rise will occur in the oven.
  11. Bake for 35 to 45 minutes. If the crust is darkening too quickly, you can cover it with foil and return to baking until done.
  12. Carefully remove loaf from the oven and within 1 to 2 minutes, gently turn it out onto its side onto a cooling rack.
  13. Allow the loaf to cool completely before cutting it into slices using a sharp serrate bread knife.
